Hibiki is one of those amazing bottles of whiskey that tends to surprise people who have ideas on what whiskey is suppose to be. Coming from Japan, this blended whiskey is put together for the sole purpose of having exquisite taste.

The first time I tried this was on a halloween night with some friends in the suburbs. The apple and cinnamon and warming wood notes really made it feel like a perfect fall sipper. Several bottles later, this is still one of my personal favorites and it gets pulled out for friends who want to experience a different side to whiskey.

The nose is apples and a hint of sugar. The smell is very nostolgic for me. The taste is cinnamon, apples some vanilla and sweetness, like a confectioner's sugar. The finish lingers for a little bit and has a sense of baked apples, cinnamon and a good punch of oaky burn on the end.

I would reccomend this bottle for your bar, especially if you are looking to build out a variety of flavor profiles. This is also a great gift bottle for people in your life that may enjoy whiksey but havent journeyed into Japanese whiskey yet.

How to Taste
With your whiskey at room temperature, put the glass near your nose and close your eyes and inhale. What do you smell? Drink a sip, just enough to cover your tounge and swish it around front, left and right. then down the hatch. What do you taste? If it burns a little, maybe try to add a couple drops of water. Otherwise, try again - usually after the initial burn, you may get some of the flavors you are looking for.
